We’ve all had those nights when dinner is all planned and then… we’re missing a key ingredient or plans change or it all unravels. While we’ve all had to become adept at last minute dinner plans, it’s easier with a bit of inspiration. Which is why we’ve compiled a list of our favorite quick easy dinners.
Most of these are crock-pot recipes so you can throw them together and walk away for a few hours. If you have a little extra time one day, it’s great to put two or three of these together in gallon ziplock bags and throw them in the freezer.
It’s also a great idea, if you have a bit of extra cooking time one day, to make some homemade chicken broth and freeze it in quart ziplock bags. It’s a great way to add some flavor to these recipes and to have chicken broth on hand in a pinch.
Get ready for a night with few ingredients, low effort and a delicious dinner!
9 ingredients (mostly spices you probably have in your pantry) including chicken (thighs, drumsticks, whatever you’ve got) thrown in a crock-pot for four hours and serve with rice and salad makes this a no hassle, improv dinner.
This is really a hodge podge of whatever you’ve got in the fridge or pantry. The soup base is 7 ingredients (including spices) you probably have in your pantry. Then you just add whatever vegetables you’ve got to work with.
This ISN’T a crock-pot recipe but it’s super easy! 9 ingredients (including salt and pepper). Boneless chicken thighs make it easy and inexpensive. Squash and zucchini make it healthy. And on top of all that it’s delicious!
Like the name suggestions, this is basically tacos but in a crock-pot instead of standing by the stove top browning the meat. It’s sounds like it could be chili, but it’s not quite as thick and has a different flavor than chili. 5 – 7 ingredients (depending on your tastes) and you’re ready to go.
10 ingredients (including salt and pepper). A whole chicken and a crock-pot pot make this super easy and super tasty. Serve with rice, pasta and/or salad for a great dinner on the fly.
3 ingredients (5 with salt and pepper) including chicken drumsticks (for quick easy and cheap), thighs or breasts. Add a can or two of baked beans and some potato salad for sides and you’ve got dinner all ready.
