This recipe takes plain old chicken and infuses it with hints of lemon. Simple flavors of thyme and garlic mingle in the crock-pot to give it a hearty, home cooked taste. With celery and carrots, this is a complete paleo meal.

Organic chicken is a great lean protein. It’s also one of the more inexpensive organic, hormone free meats.

Celery is full of antioxidants, beneficial enzymes, improves the health of your skin. liver, eyes and cognitive functions. All in one tasty vegetable! It’s also a healthy source of fiber (important if you’re paleo or gluten-free and so eating fewer or no grains).

Carrots improve your cardiovascular health by reducing cholesterol. They contain vitamin A to improve your vision and skin and vitamin C to stimulate the activity of white blood cells.

Simmering in the crock-pot all day this is an easy to prepare, deliciously tender chicken meal, adapted from the Civilized Caveman. Served it over quinoa to keep it paleo, over rice if you’re gluten-free or with potatoes and salad for a scrumptious dinner!

Lemon Crock-pot Chicken

Prep Time: 10 minutes

Cook Time: 6 hours

Yield: 4 servings

Lemon Crock-pot Chicken


  • olive oil
  • 1 whole chicken
  • salt and pepper
  • 1 cup water
  • 1 clove of garlic, peeled and smashed
  • 1 tablespoon thyme
  • 3 stalks of celery, diced
  • 2 carrots
  • 1/2 small onion, chopped
  • 2 lemons


  1. Generously season the inside and outside of the chicken with salt and pepper
  2. Coat crock-pot with olive oil and add water.
  3. Place garlic and 1/2 thyme inside the chicken
  4. Place chicken in crock-pot
  5. Sprinkle remaining thyme over chicken. Add vegetables to crock-pot
  6. Juice the lemon over the chicken and vegetables then place the lemon halves inside the chicken
  7. Cook on LOW for 6 hours
  8. Remove chicken from crock-pot and shred. Then place back in the broth
  9. Serve shredded with all the veggies over rice, quinoa or gluten-free pasta
