Greek Lemon Chicken is a great way to mix up your weekly meal plan. It’s unique flavor pairs well with couscous, rice, salad, quinoa or a variety of different vegetables.


I love these crock-pot recipes that you can easily combine in a ziplock bag and freeze. Just cook it another hour or two when you add it to the crock-pot frozen.

As usual, I actually cook this with minced onion rather than chopping an actual onion. It’s simpler to cook and still provides the flavor. But I wrote the recipe for those who actually like onions.

Greek Lemon Chicken

Prep Time: 5 minutes

Cook Time: 4 hours

4 servings


  • olive oil
  • 1 pound chicken (boneless skinless thighs work best)
  • 1 teaspoon paprika
  • 1 teaspoon rosemary
  • 1 clove garlic
  • 1 small onion
  • 1 lemon
  • 1 tablespoon basil
  • 1 tablespoon thyme
  • 1 cup chicken stock
  • salt and pepper


  1. Coat crock-pot in olive oil
  2. Place chicken in crock-pot. Add all remaining ingredients.
  3. Cook on HIGH for 4 hours.
