Balsamic Crock-Pot Chicken is a go to favorite for us. There’s very little prep time. Only a few ingredients (most of which are always in the pantry) and it’s adaptable. It works with boneless or bone-in chicken breasts, thighs or drumsticks (whatever you have on hand). Plus it’s delicious!
The combination of balsamic vinegar and chicken, adapted from Paleo Fresh, makes this especially healthy. Balsamic vinegar helps your body absorb the protein in the chicken. Balsamic vinegar boosts the activity of pepsin, which is an enzyme that helps your body break proteins down into smaller amino acids. That way they can be more easily absorbed and utilized.
Make it even easier by planning ahead – toss the ingredients in a ziplock bag and freeze until you’re ready to cook. Just cook for an additional hour or two if frozen. Then serve with rice (or quinoa for paleo eaters) and salad.
Quick, easy, healthy and delicious. It doesn’t get much better than that!
Balsamic Crockpot Chicken
- 1 tsp garlic powder
- 1 tsp dried basil
- ½ tsp salt
- ½ tsp pepper
- 2 tsp dried minced onion
- 1 Tbs extra virgin olive oil
- ½ cup balsamic vinegar
- 8 boneless skinless chicken thighs
- 1 cup chicken broth
- Combine the dry ingredients together and rub them on the chicken.
- In the bottom of your crockpot place the olive oil and garlic.
- Put in your chicken next and pour balsamic vinegar over everything. Cook on high for 4 hours.
