Mix and match your favorite flavors with this simple vegetable soup. Different combinations of vegetables create a slightly different flavor every time. And it’s simple to use seasonal ingredients without having a dozen distinct recipes.

Modifications

Once again, I left the original recipe with chopped onion, but I actually cook it with minced onion (or leave it out altogether). I’m actually not a fan of onions but I know most people like to cook with them. Depending on the combination of vegetables you choose, onion will sweeten the broth some. Sometimes that works and sometimes not so much.

That’s the fun thing about this recipe, you can play with the vegetables to create different flavors. Corn will make it a little sweeter. Spinach and kale will have a very specific taste that you can balance with cauliflower or blend with green beans. It’s like alchemy.

Also, I LOVE sour flavors so the splash of red wine vinegar makes this recipe for me. If you’re not a fan of sour, add a bit more basil and thyme or some oregano when you omit the vinegar to give the soup plenty of flavor.

Seasonal Vegetable Soup

Prep Time: 15 minutes

Cook Time: 4 hours

Ingredients

    Soup Base
  • 1 cup chicken stock
  • 1 can diced tomatoes
  • 2 tablespoons thyme
  • 1 tablespoon basil
  • 1 teaspoon garlic powder
  • splash of red wine vinegar
  • chicken (cubed, optional)
  • 2 cups water
  • 1/2 small onion (chopped)
  • salt and pepper
  • Vegetables
  • broccoli
  • cauliflower
  • celery
  • carrots
  • green beans
  • corn
  • squash
  • zuccini
  • spinach
  • kale
  • cabbage
  • chard
  • bok choy
  • parsnips
  • rutabegas
  • brussels sprouts
  • beets (very teeny tiny amount)

Instructions

  1. Mix base ingredients in crock-pot and stir
  2. Chop vegetables of your choice
  3. Add to crock-pot
  4. Cook on LOW 4-6 hours
